Default Re: Beer, Whiskey and Pork Fat: The New Health Foods?

Wait a minute... I'm still trying to get this one to pass by the brain...bacon fat mayonnaise.

Round here they have a dish called Carnitia. It's basically slow roasted, heavily saturated fat on the pork meat. It winds up with an unusal texture that is soft in the middle and crispy on the outside edges. You eat you a batch of that and it will put you into a stupor. That fat just overloads what ever active cells you had in the body and replaces them with siesta cells. You go into a digestive hibernation for a few hours. It's a couch potato's dream of heaven.
